Chocolate-Nut Brownies

 

 

Ingredients:


  • 5 oz. Chocolate chopped
  • ½ Cup oil
  • 11/4 Cup sugar
  • 2 Eggs
  • 1 Teaspoon vanilla
  • ½ Cup flour
  • 1 Teaspoon baking powder
  • 4 Tablespoons cocoa powder
  • ¾ Cup chopped nuts
  • Pinch of salt

Method:

 

  1. Preheat the oven to 350oF
  2. Grease a 71/2 inch square cake tin
  3. Melt the chocolate slowly over barely boiling water. (Be careful not to let any moisture into the chocolate as it will clump)
  4. Beat the oil, sugar, eggs and vanilla until mixed and smooth
  5. Sift the flour, salt and cocoa powder into the bowl of melted chocolate and fold in carefully
  6. Stir in the chopped nuts
  7. Place in the cake pan and smooth evenly
  8. Bake for 30-35 minutes until done
  9. Cool in the tin  and then cut into slices

 

 

 

Low Fat Banana Brownies

  • 5 Tablespoons cocoa powder
  • 1 Tablespoon castor sugar
  • 5 Tablespoons skimmed milk
  • 3 Large bananas mashed
  • 1 Cup sugar
  • 1 Teaspoon vanilla
  • 5 Egg whites
  • ¾ Cup flour
  • 11/2 Teaspoon baking powder
  • Pinch of salt
  • ¾ Cup oats bran

Method:


  1. Preheat the oven to 350oF
  2. Grease and line an 8 inch square cake tin
  3. Mix the castor sugar, cocoa and salt with the milk
  4. Add the bananas, sugar and vanilla
  5. Lightly beat the egg whites
  6. Add the chocolate mixture and beat well
  7. Sift the flour over the mixture, add the oats bran and fold in
  8. Pour the mixture into the pan
  9. Bake for about 40 minutes until done
  10. Cool in the tin and cut into squares

If very low fat brownies are not required, a tablespoon of oil can be added to the mixture for brownies that are moist.

Try this tasty variation on the normal brownies.


Ingredients:


  • 4 oz. Butter
  • 1 Egg
  • 1 Teaspoon baking powder
  • ¾ Cup coconut
  • ¾ Cup sugar
  • 1 Cup flour
  • 1 Tablespoon cocoa
  • ½ Cup walnuts
  • 1 teaspoon vanilla
  • 1 Cup dates cut up
  • Pinch of salt

Method:


  1. Cream butter and sugar. Add well beaten egg. Sift flour, baking powder, salt and cocoa and add.
  2. Add coconut, walnuts, cut up dates and vanilla.
  3. Spread in tin, bake for 20 minute at 350oF.
  4. Ice with chocolate icing while hot.
  5. Cut into slices when cold.

Cherry and Chocolate Chip Cake


Ingredients:                                                                                                     


  • 4 oz. Castor sugar
  • 4 oz. Glace cherries
  • 8 oz. Self-raising flour
  • Warm water
  • 2 Eggs
  • 4 oz. Margarine
  • 4 oz. Dark chocolate

Method:


  1. Cream margarine and sugar until light and fluffy.
  2. Gradually beat in the eggs, one at a time.
  3. Fold in sieved flour, adding sufficient warm water to form a soft mixture.
  4. Add chipped chocolate and halved cherries.
  5. Put into a greased, lined 7“ tin and bake 11/2 hours at 350oF.
  6. Dredge with castor sugar and cool on wire tray.
