Chocolate-Nut Brownies
Ingredients:
- 5 oz. Chocolate chopped
- ½ Cup oil
- 11/4 Cup sugar
- 2 Eggs
- 1 Teaspoon vanilla
- ½ Cup flour
- 1 Teaspoon baking powder
- 4 Tablespoons cocoa powder
- ¾ Cup chopped nuts
- Pinch of salt
Method:
- Preheat the oven to 350oF
- Grease a 71/2 inch square cake tin
- Melt the chocolate slowly over barely boiling water. (Be careful not to let any moisture into the chocolate as it will clump)
- Beat the oil, sugar, eggs and vanilla until mixed and smooth
- Sift the flour, salt and cocoa powder into the bowl of melted chocolate and fold in carefully
- Stir in the chopped nuts
- Place in the cake pan and smooth evenly
- Bake for 30-35 minutes until done
- Cool in the tin and then cut into slices

Low Fat Banana Brownies
Ingredients:
- 5 Tablespoons cocoa powder
- 1 Tablespoon castor sugar
- 5 Tablespoons skimmed milk
- 3 Large bananas mashed
- 1 Cup sugar
- 1 Teaspoon vanilla
- 5 Egg whites
- ¾ Cup flour
- 11/2 Teaspoon baking powder
- Pinch of salt
- ¾ Cup oats bran
Method:
- Preheat the oven to 350oF
- Grease and line an 8 inch square cake tin
- Mix the castor sugar, cocoa and salt with the milk
- Add the bananas, sugar and vanilla
- Lightly beat the egg whites
- Add the chocolate mixture and beat well
- Sift the flour over the mixture, add the oats bran and fold in
- Pour the mixture into the pan
- Bake for about 40 minutes until done
- Cool in the tin and cut into squares
If very low fat brownies are not required, a tablespoon of oil can be added to the mixture for brownies that are moist.

Darky Dandy
Try this tasty variation on the normal brownies.
Ingredients:
- 4 oz. Butter
- 1 Egg
- 1 Teaspoon baking powder
- ¾ Cup coconut
- ¾ Cup sugar
- 1 Cup flour
- 1 Tablespoon cocoa
- ½ Cup walnuts
- 1 teaspoon vanilla
- 1 Cup dates cut up
- Pinch of salt
Method:
- Cream butter and sugar. Add well beaten egg. Sift flour, baking powder, salt and cocoa and add.
- Add coconut, walnuts, cut up dates and vanilla.
- Spread in tin, bake for 20 minute at 350oF.
- Ice with chocolate icing while hot.
- Cut into slices when cold.
Cherry and Chocolate Chip Cake
Ingredients:
- 4 oz. Castor sugar
- 4 oz. Glace cherries
- 8 oz. Self-raising flour
- Warm water
- 2 Eggs
- 4 oz. Margarine
- 4 oz. Dark chocolate
Method:
- Cream margarine and sugar until light and fluffy.
- Gradually beat in the eggs, one at a time.
- Fold in sieved flour, adding sufficient warm water to form a soft mixture.
- Add chipped chocolate and halved cherries.
- Put into a greased, lined 7” tin and bake 11/2 hours at 350oF.
- Dredge with castor sugar and cool on wire tray.
